Brown Rice, Chicken & Greens (Serves 2)
Ingredients: 115g (M) / 75g (F) uncooked brown rice; 300g (M) / 200g (F) raw chicken breast, chopped; 1 garlic clove, crushed; 1 tsp turmeric powder; 5ml extra virgin olive oil. Alkalising Greens: 100g kale, chopped; 100g baby spinach leaves, chopped; 50g brown onion, diced; 1 garlic clove, crushed; 1 tsp grated ginger; 5ml extra virgin olive oil.
Method: Boil 700ml of water in a saucepan over medium temperature and cook the brown rice for 25-30 minutes. Season with Himalayan salt and pepper.
To cook the chicken, heat olive oil in a non-stick fry pan over medium temperature and add the chicken breast with the turmeric and 1 crushed garlic clove. Cook for 3-4 minutes on each side, or until cooked in the centre.
To cook the alkalising greens, heat olive oil in a separate non-stick fry pan over medium temperature and sauté the onion, spinach and kale with garlic and ginger for 7 minutes, or until the spinach and kale wilt.
Divide the greens, brown rice and chicken into two meals. Serve one and refrigerate the second for tomorrow's leftovers.
