Ingredients: 1 ripe banana; 1 cup rolled oats; 1 tsp matcha powder; 1 egg; 1/2 cup milk (dairy or plant-based); 1/2 tsp baking powder; 1 scoop protein powder; a pinch of salt. Optional toppings: sliced bananas, honey, or Greek yogurt.
Method: In a blender, combine the ripe banana, rolled oats, matcha powder, egg, milk, baking powder, protein powder and a pinch of salt. Blend until you have a smooth pancake batter.
Heat a non-stick skillet over medium heat. Pour small portions of the batter onto the skillet to form pancakes. Cook until bubbles form on the surface, then flip and cook the other side until golden brown. Repeat until all the batter is used.
