Choc Chia Breakfast Mousse (Serves 1)

Ingredients: 35g avocado; 3 tbsp chocolate vegan protein powder (or flavour of your choice); 1 tbsp (7g) cacao powder; 1/4 tsp ground nutmeg; 100ml unsweetened almond milk; 40g natural coconut yoghurt (unsweetened); 1/2 tsp stevia; 30g chia seeds.

Method: Add the avocado, protein powder, cacao powder, nutmeg, almond milk, yoghurt and stevia to a blender and blitz until smooth.

Stir through the chia seeds, then set in the fridge for 30 minutes to allow the chia seeds to expand and the mixture to thicken. Serve.
