Flaxseed Banana Oat Muffins (Serves 5)

Ingredients: 130g rolled oats; 150g ripe bananas; 1 egg; 40g flaxseed meal; 50g walnuts, chopped; 100ml unsweetened almond milk; 2 tsp baking powder; 1 tsp cinnamon; 1/3 tsp stevia granules.

Method: Pre-heat the oven to 180°C and line 5 muffin cases in a muffin tray. Mash the bananas with a fork in a large bowl, then add the oats, flaxseed meal, baking powder, cinnamon, stevia and walnuts.

Crack the egg into a separate bowl and whisk, then mix in the almond milk. Pour the liquid into the dry ingredients and combine well.

Pour the mixture into 5 small-medium muffin cases and bake for 20 minutes, or until cooked in the centre. Allow to cool for 5 minutes before serving one muffin; refrigerate the remaining 4 to enjoy over the week.
